I do not recall how I came up with one, nor can I explain why I like it so much. My husband thinks it’s an abomination, but he likes peanut butter and jelly sandwiches with cheese, so his opinion doesn’t count.

Take an everything bagel and toast it. Spread it with a little bit of butter. Get some fresh spinach leaves and smoked mozzarella cheese. I use a piece of smoked mozzarella string cheese, cut into chunks.

Throw it all together.

So good. Smoky and salty, garlicky and delicious.

  1. That looks yummy! My favorite would have to be a vegan spread from Laurel's kitchen –Zippy Soy spread, I think it's called. It's cooked soy beans (but I usually do this with garbanzos), pureed with some sauteed onions, celery, garlic, green pepper, oregano, and tomato paste, seasoned with a bit o salt. I spread this on good thick whole wheat bread, and add, a thick layer of tomatoes and some lettuce. It turns out much like a tomato sandwich, but with the added boost of the bean spread.
